Buckwheat Blini

Chef agreed to part with his Blini recipe for National Pancake Week (actually Monday was the day).

 

Buckwheat Blini

3 cups flour

3 cups buckwheat flour

3 tablespoons baking powder

2 tablespoons Kosher salt

2 ¾ cups buttermilk

3 eggs

Method

Mix all the dry ingredients together in a large bowl.

Add buttermilk and mix until incorporated.

Separate egg yolks and whites.

Add yolks to batter and stir to combine.

Whip whites until soft peaks form and gently fold into batter.

 

From there it’s your imagination. Chef loves to top with Crème Fraiche and a spoon of caviar or his home made smoked salmon.
